FORT by Maison Ikkoku comes from the visionaries behind Maison Ikkoku and invites diners to a sensory experience this festive season through an unforgettable combination of food and cocktails created by Executive Chef and Master Mixologist Ethan Leslie Leong.
FORT by Maison Ikkoku is located within the newly-minted Pinacotheque De Paris at the historical site of Fort Canning Hill and is a dining concept fully developed by Ethan. With the opening of this restaurant, Ethan comes full circle as a chef and a mixologist as he applies his legendary cocktail techniques with a balanced selection of food, from soups to salads, cocktail carpaccio to hand-rolled maki, signature dishes & desserts.
As well as the Signature A la Carte Dishes at FORT by Maison Ikkoku, this festive season sees a three-course menu available from now until 31st December 2015.
Signature A La Carte Dishes include;
The Sea : Seafood lovers will relish the combination of Hokkaido Scallop, Irish Oyster, Seaweed, Ikura, Tobiko and Ebiko on a bed of sea salt sorbet (S$38++)
The Nest : This divine creation combines hot melted mozzarella, Parmiagiano-Reggiano with free-range chicken eggs. (S$28++)
The Fort : This signature spicy dish, although very spicy, is very nice and pleasant to eat. A Spicy Maguro Hand-roll (S$18 – 4 pcs / S$28 – 8 pcs) – featured image top.
The Fort by Maison Ikkoku Festive menu comprises three-course using ingredients iconic to this celebratory time and is a sure way of diners immersing themselves in the festivities of the holiday season.
Fort by Maison Ikkoku Festive Menu priced at $38++ per person (add $20++ for additional two festive cocktails);
Starter of the Day – a surprise starter of the day that changes every day based on the ingredients available,
Main Course – Holiday Turkey, this is two succulent turkey breast medallions marinated with a mix of herbs and spices and cooked sous-vide style. With an infusion of truffles and a sprinkle of cinnamon to further heighten the aromas of the dish, this is extremely tender and juicy.
Dessert – Martell Cordon Bleu Lavender Crème Brûlée is a silky custard infused with the subtle scent of lavender, topped with crunchy caramelised sugar crust. The addition of premium cognac enriches the dessert with its warm melted buttery caramel notes.
With the Festive Menu priced at just S$38++ per person, why not add on S$20++ and pair you main course and your dessert with two festive cocktails developed by Chef Ethan too;
Santa Red – paired with the Holiday Turkey, this cocktail boasts a mellow note from the port-like red wine reduction with a perfumed nose of bergamot.
The Snowman – to pair with your dessert, a concoction of spice rum with luscious buttered popcorn, hazelnut and milk.
