The Healthier Choice: Wellness Tea Time At Chef’s Kitchen

Want to go healthy and eat raw for tea? Now you can with the Wellness Tea at Capella Singapore’s Chef’s Kitchen. Capella’s Chef David Senia has worked together with raw food chef, Sandra Lim to conceptualised a menu for tea that is completely plant-based, gluten-free and refined sugar-free. And yes, though it sounds healthy, it’s really delicious too.

The challenge comes from high tea usually comprising of many flour heavy items, and the chefs had to put their hats together to come up with viable alternatives for these items. This involved nearly a year of conceptualisation and experimentation. So what’s on the menu? Items like Cauliflower Millefeuille with Shiitake Bacon, Cultivated Blueberry ‘Cheesecake’ with Beetroot Glaze, and Cacao Avo Mousse. The ‘cheesecake’ in particular tasted quite cheesy, despite there being no cheese, thanks to the use of probiotics as a substitute.


All these types of “tricks” are used to create a menu that tastes like the real thing, but is much better for you and easier to digest for sure. In fact, if you didn’t know that it was a raw version of the similar nibbles, you wouldn’t be able to tell that it were so, we think. 

Of all the items, chef Sandra shared that the scones were one of the toughest as pastries usually require flour and eggs to become nice and fluffy, and nope she couldn’t use flour and eggs, and she shared how she was depressed whenever she would see the pastries at the Capella kitchen as she was not able to get her scone to rise in the same manner. This perhaps was the least like the real item that we ate, as it was rather dense, but that’s just us picking at bones because it tasted absolutely delicious; all the items did in fact taste absolutely delicious. 


The tea set also comes with a selection of Ayurvedic-based teas. It’s actually this first thing you’ll do once you enter. You’ll be guided by the onsite tea sensei to pick a tea that suits your needs for the day to accompany you for the afternoon. This special tea time is available only on Fridays and with the limited space, it’s highly advised to make a booking before you come.
